Ingredients

  • 40g butter
  • 1 red onion, finely chopped
  • 1 garlic clove, crushed
  • 600g  mushrooms, chopped
  • 200g oyster mushrooms, chopped
  • 2 tbsp soy sauce
  • 1 tsp dried rosemary
  • 1 tsp paprika
  • 75g ground almonds
  • 100g walnuts, toasted and roughly chopped
  • 375g ready-rolled puff pastry
  • 2 tbsp wholegrain mustard
  • beaten egg, to seal and glaze

Cooking Instructions:

Step 1:

In a large frying pan, melt the butter over medium heat. Add the onion and cook until softened.

Then, add the garlic and mushrooms, and continue to cook while stirring occasionally until the mixture has considerably reduced and is dry. This should take about 10-15 minutes.

Next, add the soy sauce and stir for 1 minute. Remove the pan from heat and mix in the rosemary, paprika, and nuts. Season to taste, and set aside to cool.

Step 2:

Preheat your oven to 200C/180c fan/gas 7. Take the pastry out of its wrapping and spread a layer of mustard on it, ensuring you leave a 2cm border all the way around.

Evenly spoon the cooled mushroom mixture down the center of the pastry.

Brush the edges of the pastry with beaten egg, then bring the two long edges together and pinch them firmly to seal. Seal the ends in the same way, and you're ready to bake.

Step 3:

Gently flip the wellington over to hide the seam. Brush the top with beaten egg and create a pattern of your choice by lightly scoring the surface with diamonds or simple lines.

Bake in the oven for 25-30 minutes or until the pastry is golden and crispy.

Let it cool for 5 minutes before slicing it into thick portions and serving.
