Ingredients

  • 200g basmati rice

  • 15g dried oyster mushrooms

  • 1 tbsp vegetable oil

  • 6 flat mushrooms, sliced

  • 1 onion, thinly sliced

  • 2 cloves garlic, crushed

  • 1 tbsp sweet smoked paprika

  • 1 tbsp tomato purée

  • 200ml half-fat soured cream

  • a handful of leaves flat-leaf parsley, chopped

 

Cooking Instructions:

 

Step 1:

Place the rice in a small lidded pan with 400ml of water and a pinch of salt. Bring it to a boil, then reduce the heat to a gentle simmer. Cover with a lid and simmer for 10 minutes. Remove from heat and let it steam for another 10 minutes. Fluff up the rice with a fork.

 

Step 2:

Meanwhile, pour 150ml of just-boiled water over the porcini mushrooms in a small bowl. In a large non-stick frying pan, heat the oil and fry the flat mushrooms and onion for about 10 minutes, until all of the water has evaporated and they start to caramelize.

 

Step 3:

Add garlic, paprika, and tomato purée to the pan and cook for a minute. Drain the porcini, but keep the liquid, then chop them roughly. Add them to the pan with the soaking liquid. Turn down the heat to low and cook gently for 10 minutes. If the mixture is too thick, add a splash of water. Stir in the soured cream and season to taste.

 

Step 4:

Spoon the white basmati rice onto plates, then spoon over the stroganoff mixture. Finally, sprinkle with parsley.
