Ingredients

  • 10g dried porcini
  • 50g unsalted butter
  • 1 tbsp vegetable oil
  • 500g mushrooms, cleaned and sliced
  • 1 onion, finely diced
  • 3 cloves garlic, sliced
  • 15 sprigs thyme, leaves picked
  • 600ml chicken stock
  • 100ml double cream        

 

 

 

Pickled Mushrooms

  • 75ml white wine vinegar
  • 100g caster sugar
  • 200g mushroom mix, (such as Ocado's gold exotic mushroom mix)

 

 

 

 

Cooking Instructions:

 

Step 1:

For the pickled mushrooms, warm the white wine vinegar and caster sugar in a small saucepan with a pinch of salt until the sugar dissolves.

 

Take the pan off the heat and pour in 50ml of water. Allow the mixture to cool to room temperature, then add the mushrooms and let them pickle while you prepare the soup.

 

 

 

 

Step 2:

In a bowl, place the dried porcini mushrooms and pour boiling water over them.

 

In a large pan, heat the butter and oil together. Once the butter starts to foam, add your mushrooms and cook over high heat for 10 minutes until they turn a deep golden brown and all the water has evaporated.

 

 

 

 

Step 3:

Lower the heat and add the onion, garlic, thyme leaves, and a pinch of salt. Fry them for 3-4 minutes until soft.

 

Strain the porcinis to eliminate any grit, then add them to the pan along with the strained porcini liquid and chicken stock.

 

Simmer for 15 minutes. Take it off the heat and stir in the double cream.
