Ingredients

  • 25g mushrooms 
  • 500g, roughly chopped
  • 3 mushrooms roughly chopped
  • 2 tbsp vegetable oil
  • 2 shallots, finely chopped
  • 3 garlic cloves, finely chopped
  • few sprigs of thyme, leaves stripped
  • 50ml dry sherry
  • 250g soft cheese
  • ½ tsp black peppercorns, crushed

 

 

 

 

 

 

Cooking Instructions:

 

Step 1:

Place the dried mushrooms in a heatproof bowl and pour 100ml of freshly boiled water over them.

 

Next, add the mushrooms to a food processor and pulse until finely chopped.

 

 

 

 

 

 

 

 

 

 

 

Step 2:

In a large frying pan, heat 1 tablespoon of oil over medium-high heat. Add the finely chopped mushrooms and a pinch of salt.

 

Fry the mushrooms, tossing them regularly, for approximately 10 minutes until the moisture in the pan has evaporated and the mushrooms begin to caramelize.

Step 3:

In the same pan, heat the remaining tablespoon of oil. Add the shallot and a pinch of salt, and sauté for 5 minutes until softened.

Drain the mushrooms, reserving 50ml of the liquid.

 

Finely chop the mushrooms and add them to the pan along with the reserved liquid.

Place the soft cheese in the food processor, along with the black pepper.
