- 3 tbsp olive oil
- 2 large onions, halved and sliced
- a knob butter, plus extra for the dish
- 1 tbsp balsamic vinegar
- 400g mushrooms, sliced
- 1 clove garlic, crushed
- 200g spinach, chopped
- 500g ricotta
- 1 lemon, zested and juiced
- 200ml vegetable stock
- 12 fresh lasagne sheets
- 50g parmesan (or veggie alternative), finely grated
- green salad, to serve
In a large non-stick frying pan, heat 2 tablespoons of olive oil.
Sauté the onions with a generous pinch of salt over low heat for approximately 25 minutes until they become tender and develop a slight color.
Next, introduce a knob of butter and balsamic vinegar, stirring for a minute before transferring the mixture into a spacious bowl.
After wiping the pan clean, add another tablespoon of oil along with the mushrooms.
Increase the heat to high and cook while stirring, allowing the mushrooms to release their liquid, soften, and for the liquid to evaporate.
Introduce the garlic and cook for one minute.
Proceed to add the spinach and cook until it wilts.
Transfer the mushrooms and spinach mixture into the bowl with the onions and combine them thoroughly.
Preheat the oven to 190°C (or 170°C for fan ovens, or gas mark 5).
Whisk together the ricotta, lemon juice, lemon zest, vegetable stock, and a generous amount of seasoning until well combined.
Pour freshly boiled water into a baking dish, preparing it to soften the lasagne sheets.
Spread a thin layer of the mushroom and spinach mixture in a buttered baking dish.
Place enough lasagne sheets to cover the mixture (briefly dipping each sheet into the hot water before layering to maintain juiciness).
Spread one-third of the ricotta evenly over the lasagne sheets, followed by half of the remaining mushroom and spinach mixture.
Cover with another layer of lasagne sheets. Repeat the process with another one-third of the ricotta and the remaining mushroom and spinach mixture.
Add a final layer of lasagne sheets and spread the remaining ricotta on top.
Sprinkle grated Parmesan cheese over the ricotta layer.
Bake in the oven for 35-40 minutes or until golden and bubbly.
Optionally, serve the lasagne with a side of green salad.
