Ingredients

  • 8 oz Chinese egg noodles (dried ramen, spaetzle or spaghetti noodles will work as well – follow package’s cook time instructions)
  • Neutral oil of choice, such as avocado oil
  • 1/2 lb lion’s mane, gently torn into 1 to 2 inch pieces
  • 1 carrot, peeled and julienned
  • 1 head of baby bok choy, trimmed and sliced into 1/2 inch pieces
  • 1 red bell pepper, julienned
  • 1 yellow onion, thinly sliced
  • 2 celery stalks, cut on a bias
  • 3 garlic cloves, thinly sliced
  • 1 bundle of green onions, white and light green parts sliced into 2 inch pieces, dark green parts reserved
  • 1 tbsp. sherry vinegar or Shaoxing cooking wine
  • 3 tbsp. tamari
  • 1 tbsp. coconut aminos
  • 1 tsp. sesame oil
  • Salt and pepper to taste
  • Celery leaves, lime wedges and sliced dark green parts of green onions for garnishing, optional

Cooking Instructions:

Step 1:

Begin by seasoning a large pot of water with salt and bringing it to a boil. Once boiling, add Chinese egg noodles and cook them for approximately 3 minutes or until they are al dente.

Drain the noodles, allow them to cool, and then toss them with 1 tablespoon of oil to prevent sticking. You can either set the noodles aside in a large bowl or spread them out on a sheet pan.

Step 2:

As your noodles cool, prepare your wok or large skillet by heating it on high heat. Once preheated, add 1 tablespoon of oil and tilt the pan until it is fully coated. The oil should begin to glisten and smoke slightly.

Next, add your Lion's Mane mushrooms and toss them a few times, allowing them to sit undisturbed for approximately 30 seconds to lightly char. Repeat this process several times until the mushrooms are nicely browned, which should take approximately 3 minutes in total.

Once the mushrooms are cooked, remove them from the wok and transfer them to a sheet pan (if you plan to mix them with the noodles later). Lastly, add a pinch of salt and pepper to the mushrooms.

Step 3:

To cook a bigger portion, follow the second step using a larger batch of vegetables including carrots, baby bok choy, red bell pepper, yellow onion, and celery.

Don't forget to pour an additional tablespoon of oil before you start. Once the veggies are charred, place them on your sheet pan and sprinkle some salt and pepper.

Step 4:

Pour an additional tablespoon of oil into the wok or skillet and gently sauté the garlic and green onions for about a minute. Be careful not to let them burn, stir occasionally. Quickly add in the noodles and vegetables, then pour in the sherry vinegar, tamari, coconut aminos, and sesame oil. Toss everything together to mix well.

If the sauce seems too thick, you can add another tablespoon of oil. Taste the dish and add more salt and pepper to your liking.

Step 5:

Yes, it's finally ready! Serve it hot and don't forget to add those tangy lime wedges and sprinkle the reserved green onions on top! Woo-hoo! Get ready to indulge in this amazing dish and enjoy every single bite!
