Ingredients

  • 4 Tbsp. extra-virgin olive oil

  • 1 lb. mixed mushrooms (such as maitake, oyster, crimini, and/or shiitake), torn into bite-size pieces
  • Kosher salt

  • 2 medium shallots, finely chopped

  • 1 lb. spaghetti or bucatini

  • ½ cup heavy cream

  • ⅓ cup finely chopped parsley

  • Zest and juice of ½ lemon

  • 2 Tbsp. unsalted butter, cut into pieces

  • ½ oz. Parmesan, finely grated (about ½ cup), plus more for serving

  • Freshly ground black pepper

Cooking Instructions:

Step 1:

In a Dutch oven or a large pot, heat 2 tablespoons of oil over medium-high heat.

Add half of the mushrooms in a single layer and allow them to cook undisturbed until the edges turn brown and start to crisp, which usually takes about 3 minutes.

Give the mushrooms a toss and continue cooking, occasionally tossing, until all sides are brown and crispy, typically around 5 more minutes.

Using a slotted spoon, transfer the cooked mushrooms to a plate and season them with salt.

Repeat the process with the remaining 2 tablespoons of oil, the rest of the mushrooms, and additional salt as desired.

Step 2:

Lower the heat to medium-low and add all of the mushrooms back into the pot.

Introduce the shallots and cook while stirring frequently until the shallots become translucent and tender, which usually takes around 2 minutes.

Step 3:

While that's happening, prepare the pasta by cooking it in a large pot of boiling salted water.

Stir occasionally and cook until it reaches a very al dente consistency, which is typically about 2 minutes less than the suggested cooking time mentioned on the package directions.

Step 4:

Using tongs, carefully transfer the cooked pasta to the pot with the mushrooms.

Then, add the cream and 1 cup of the pasta cooking liquid. Increase the heat to medium, allowing the mixture to come to a simmer.

Toss the ingredients constantly as you cook, ensuring the pasta reaches an al dente texture and the liquid slightly thickens.

This process typically takes about 3 minutes.

Step 5:

Take the pot off the heat. Incorporate the lemon zest, lemon juice, parsley, butter, ½ oz. of Parmesan cheese, and a generous amount of pepper.

Give everything a good toss to combine the flavors. Taste the dish and adjust the seasoning by adding more salt if necessary.

Step 6:

Portion the pasta evenly among the bowls and generously sprinkle additional Parmesan cheese on top.
