  • Butter, For Frying

  • 150g mushrooms sliced

  • ½ clove garlic, crushed
  • 2 eggs, beaten and seasoned

  • 50g taleggio, sliced

  • a handful rocket, lightly dressed, to serve



Cooking Instructions:


Step 1:

Prepare the grill and set it to the desired temperature. Take a small non-stick frying pan and melt a pat of butter over medium heat. Once the butter has melted, add in the mushrooms, season with salt and pepper, and cook until they turn soft and acquire a golden brown color. To prevent burning the garlic, add it in halfway through cooking the mushrooms.


Step 2:

Remove the cooked mushrooms from the pan and add another pat of butter. Pour the beaten eggs into the pan and allow the bottom to set slightly. Draw the sides of the eggs towards the center, allowing the uncooked egg to flow into the spaces. When the egg is almost set, sprinkle the cooked mushrooms over the top and place slices of taleggio cheese on the eggs. Place the pan under the hot grill for a brief time to set the top and soften the cheese. Remove the pan from the grill and sprinkle rocket over the omelette just before serving.
